An Exhilarating Experience with Pershing and 7 Pines

There is a new couple in Ibiza and they’re pretty fabulous. It’s the marriage of Pershing Yachts and the 7Pines Resort Ibiza, two luxury identities coming together to create a whole new level of exclusive experience. 

For the first time the beautiful 7Pines Resort Ibiza, located on the western coast of the stunning island, has partnered with a luxury yacht brand. Owned by the Italian Ferretti Group, Pershing was started in 1985 and is based in Mondolfo, where they craft high-performance composite motor yachts ranging from 14 to 35 metres long.

Meanwhile, nestled on Ibiza’s idyllic west coast, 7Pines Resort Ibiza, a member of the Hyatt hotel family, boasts stunning views of the Mediterranean Ocean and the iconic Es Vedrà island. Guests can unwind in luxurious, refurbished Ibizan-style homes, honouring the island’s architectural heritage.

This all-suite resort unfolds across a sprawling 56,000 sqm, mimicking a charming Ibizan village. Guests can choose from 185 luxurious suites, and two expansive four-bedroom Grand Villas, and indulge in a variety of experiences. Three restaurants and three bars cater to diverse palates, while a spa, wellness centre, three pools, a dedicated Kids’ Club, and the option to charter two Pershing yachts, including the expansive Pershing 9, ensure an unforgettable stay.

Pershing Yacht Terrace

Opened in June 2018, the Pershing Yacht Terrace is a one-of-a-kind lounge designed by Pershing’s in-house team. It embodies the brand’s essence, capturing the spirit and style that define their yachts. The centrepiece? A stunning carbon fibre bar, its form mirroring the iconic side wing with its signature glazed windows – a subtle nod to the sleek elegance of Pershing’s X series.

From the bar’s sophisticated Pershing grey to the plush lounge area that transforms into a vibrant space with DJ sets at night, every detail evokes the feeling of being on board a luxurious yacht. The 360-degree panorama of the Mediterranean further enhances this immersive experience.

This haven is the brainchild of a collaboration between Pershing and the renowned 7Pines Resort. Designed for pure indulgence, the Terrace caters to both daytime relaxation and unforgettable sunset viewing. 7Pines complements the experience by offering exclusive rates for chartering Pershing 5X and 9X yachts. Additionally, their expert mixologists have curated a cocktail menu that caters to all preferences: timeless classics for traditionalists and innovative creations for those seeking new flavour adventures. The Pershing Yacht Terrace is a sophisticated fusion, perfectly reflecting the brand’s philosophy.

My husband and I arrived one gorgeous Friday afternoon after spending a decadent morning on the luxury speedboat Pershing 5. Cruising around the Marina Harbour, we went up to some majestic cliffs where we parked the boat and went for a warm dip into the stunning blue sea. After a few hours of total peace and decadence (we were enjoying wine from 11 am, it has to be said) we made our way back to the 7Pines Hotel for a spot of work from the Pershing Terrace.

For lunch, the Infinity Pool Bar menu is broad and accessible – there are light bites and bigger meals. It featured starters like Rock and Roll Tuna Brioche Balfegó, Peruvian Quinoa Salad, Lobster Caesar Salad, and Beef Tenderloin Tacos. Mains included Roasted Octopus, Gnocchi Al Pesto, Tagliatelle, and Burrata Pizza. Fortunately for me, from 12 to 6 pm, the sushi menu is also available, including Creative Nigiri Selections, Soft Shell Crab Futomaki, and Wagyu Foie Uramaki.

Since we were eating and working, and with dinner still to come, we wanted something easy to digest while typing away. We settled on the deliciously spicy Chilli Rock Shrimp; the beautifully Grilled Salmon, accompanied with aubergine, sesame and a spiced yoghurt cream that had flavours reminiscent of South Asia; and, finally, the Makimono Moriawase, a 16-piece combination of uramaki, hosomaki, and futomaki. I was in Sushi heaven whilst sending out my Friday afternoon emails, what an absolute delight!

A few hours later, with work wrapped up for the day, we were fortunate to go for a quick dip in the pool before making our way to the bar to unwind with a cocktail. The lovely bartender asked what our tastes were and delivered a tasty remix of an Old Fashioned (served in a very stylish smoke pipe-shaped glass) and a bright passionfruit daiquiri (my husband has such a sweet tooth when it comes to drinks).

Pershing Inspired Drinks

The cocktail menu, meticulously crafted by expert mixologists, blends timeless classics with innovative creations. This fusion embodies the spirit of Pershing: a reverence for tradition with a dash of daring.

Each Pershing Yacht Terrace cocktail is also a gateway to Ibiza’s vibrant soul. Accompanied by a unique QR code, the drink becomes a virtual passport. It’s pretty cool – you can scan it to unlock the diverse history and culture of the island. As educators who love a bit of history, this made for a unique twist. 

We both enjoyed a unique rendition made by the excellent mixologist. I had an Ibizan take on an Old Fashioned, whilst my husband and a sweeter, Mango and Passionfruit-like affair. Both were exceptional. 

Dinner at 7Pines

After a drink each, we headed to our table for dinner. Perched in the corner of the restaurant overlooking the sea, we probably had the best spot on the terrace. It was divine. 

The dinner menu is completely different from their quite extensive lunch offering and features options such as Thai Green Papaya Salad, Okinawa Pork Rib, Chilli Lobster, Homemade Carrot Kimchi, and Duck Magret.

As usual, we requested some advice from our wonderful server, weaving in his suggestions into our selections. We started with a bottle of the house white wine, a Valtea Albariño that was bright, clean, and with just the right hint of fruit to perfectly complement our fish dishes.

The beautifully coloured Maguro No Tarutaru of Tuna Loin Balfegó, made with Sunomono cucumber, egg yolk, Japanese onion, togarashi, and pumpkin seeds, was heavenly. I am an avid sushi lover, and each cubed bite was so packed with flavour that my husband, not known for his adoration for raw fish, could not get enough, much to my chagrin! The marinated Sea Bass Miso Yaki followed, which was super tasty and set on a bed of perfectly cooked, fluffy rice. Accompanying this delicious delish was the equally fantastic Roasted Japanese Aubergine, with miso and orange cream, sesame, and fennel with mustard.

The Xiao Long Baos were unique little bundles of joy; each bite was sealed and filled with beef stoup sew, crispy, hollow rice wafers, and, the real twist, a tangy pomegranate-soy dressing. We finished the course with Wagyu Tataki, extremely rich, marbled Chilean beef served with sautéed bok choy. A simple dish that was well executed and allowed the ingredients to speak for themselves.

We capped our meal with Fried Banana and Yuzu, it’s crispy outside and warm inside complemented perfectly by the cold cinnamon peanut and fior di latte. It was exquisite, and a perfect way to finish our meal

The 7Pines Hotel Destination

Carved into the cliffs of Ibiza’s west coast, 7Pines Resort Ibiza is a luxurious haven nestled amidst a fragrant pine grove. The Restaurants

There is a wide range of restaurants on the property and each one has a view to die for. Possibly the best views on the island, you have the gorgeous “The View”, a harmonious fusion of French savoir-faire with a Mediterranean twist, and an award-winning and sophisticated concept curated by Executive Chef Óscar Salazar, set against the magnificent backdrop of Es Vedrà. This is an acclaimed fine dining restaurant honoured by the 2023 Repsol Guide with 1 Sol, and distinguished by the 2023 MICHELIN Guide (Spain & Portugal).

Then there is Cone Club, located atop the cliff overlooking the mesmerising sea and the magnetic Es Vedrà, Cone Club restaurant has evolved into a place of enchantment that evokes Ibiza’s spirit and authentic vibes, creating a vibrant and sophisticated atmosphere. DJ sessions and live music enhance the lively atmosphere from the sunset ritual until late at night. Chilled yet premium, lively yet relaxing, this is a staple at 7Pines for all visitors. 

Lastly, you have the Pershing Yacht Terrace, which my husband and I visited. Given how incredible the food was there, we know we have to try the View and Cone Club soon.

Conclusion on the Collaboration

Pershing and 7Pines make an exceptional duo. Together, these luxury brands have created something really quite unique for the island. Sporty, fun, fresh, yet premium, elegant, and so, so suave, this is a match made in heaven. We cannot recommend visiting it enough whilst you can.
